We’re a lucky lot at Earthling, we have a baker extraordinaire that brings us tasty treats when we all behave. Sometimes Simon will even share his recipes, not that anyone believes they can recreate his truly delicious confections. Although these brownies are so amazing, a few of us might be willing to try…

Ingredients:

1 cup cocoa powder
½ cup all-purpose flour
1 teaspoon baking powder
2 ½ cups powdered sugar
2 sticks + 2 tablespoons butter
1 ¼ cups dark chocolate (semi-sweet chocolate chips work well)
1 cup dried cherries
4 large eggs

Directions:

preheat oven to 350 degrees

sift the cocoa powder, all-purpose flour, baking powder, and powdered sugar into a bowl
whisk together

heat a pot of water with a bowl over it so the bowl is not touching the water
place the butter in the bowl and stir until melted
add in the dark chocolate and stir until melted
turn off the heat and remove the bowl
mix in the dried cherries

 

stir in the flour mixture from earlier until just incorporated

 

beat in the eggs until just incorporated

 

line a 9 x 12 baking dish with parchment paper
pour in the mixture

bake in the 350 degrees preheated oven for 25-30 minutes

cool to room temperature then cut into squares
