Simon Says: Perfect Cherry Brownies

Sometimes Simon will even share his recipes, not that anyone believes they can recreate his truly delicious confections. Although these brownies are so amazing, a few of us might be willing to try…

Tan counter top that has on top of it a while measuring cup full of cocoa powder, a glass measuring cup with chocolate chips, and a glass measuring cup with melted chocolate.

Ingredients:

1 cup cocoa powder
½ cup all-purpose flour
1 teaspoon baking powder
2 ½ cups powdered sugar
2 sticks + 2 tablespoons butter
1 ¼ cups dark chocolate (semi-sweet chocolate chips work well)
1 cup dried cherries
4 large eggs

Directions:

preheat oven to 350 degrees

Inside of a bowl with cocoa powder and a metal whisk.

sift the cocoa powder, all-purpose flour, baking powder, and powdered sugar into a bowl
whisk together

Inside of a bowl with milk and melted chocolate with a red plastic whisk.

heat a pot of water with a bowl over it so the bowl is not touching the water
place the butter in the bowl and stir until melted
add in the dark chocolate and stir until melted
turn off the heat and remove the bowl
mix in the dried cherries

Inside of a bowl with combined milk and chocolate and a red and silver rubber scrapper.

 

stir in the flour mixture from earlier until just incorporated

Inside of a bowl with brown batter and yellow eggs.

 

beat in the eggs until just incorporated

line a 9 x 12 baking dish with parchment paper
pour in the mixture

bake in the 350 degrees preheated oven for 25-30 minutes

cool to room temperature then cut into squares
